Prawn & avocado cocktail in little gem cups
Ideal as a starter or serve as canapés at a party
Preparation time 15 minutes
Cooking time 5 minutes
Makes 8
You will need
2 rashers smoked back bacon, with rind removed
1tbsp olive oil
1 avocado, stoned and peeled
¼ small red onion, thinly sliced
1tbsp chilli sauce
1-2tbsp fresh coriander, chopped
1tsp lemon juice
freshly ground black pepper
200g large cooked peeled prawns, thawed if frozen
8 large little gem lettuce leaves, washed
Directions
Finely chop the bacon. Heat the oil in a frying pan and cook the bacon over a high heat for about 5 minutes, stirring occasionally, until very crisp. Drain on kitchen paper and set aside.
Dice the avocado and place in a bowl. Stir in the red onion, chilli sauce, coriander, lemon juice, pepper and prawns.
Arrange the lettuce leaves on a plate and divide the prawn mixture between the leaves piling high. Scatter over crispy bacon.
